How to Store & Reheat Kozhi Ada (Fridge, Freezer, Air Fryer)

Storing: the two rules

  1. Airtight, always. The steamed rice dough is the first thing to fail - exposed to air it skins over and cracks. Box the pieces with parchment between layers.
  2. Cool before you box. Sealing warm ada traps steam, which turns the surface gummy and shortens fridge life. Give them 20-30 minutes on a rack first.

Cooked chicken filling follows normal food-safety sense: refrigerate within a couple of hours of cooking, and if a piece has sat out through a long tea party, eat it that evening rather than boxing it.

Freezing: do it in two stages

Kozhi ada is genuinely good from the freezer - this is how Malabar households bank Ramadan batches ahead of time.

  • Lay cooled pieces on a tray in a single layer and freeze until firm (about 2 hours).
  • Transfer to an airtight bag or box, pressing the air out. Label the date.
  • Use within a month for best texture. The dough holds; only very long storage dries it.
  • Reheat from frozen - counter-thawing makes the dough soggy outside while the filling is still cold inside.

The tawa method is worth learning: heat the pan on low, add a few drops of coconut oil, place the ada, sprinkle a teaspoon of water around them and cover. The trapped steam softens the dough while the base picks up a faint crust - exactly how tea shops serve them.

Serving after reheating
