What you will be ordering
Kerala banana chips - upperi in Malayalam - are thin slices of raw Nendran banana fried in coconut oil until golden and crisp, salted lightly while still hot. The Nendran variety and the coconut oil are what make them Kerala chips rather than generic banana chips: Nendran holds its structure and sweetness when fried, and coconut oil gives the unmistakable aroma every Malayali associates with the first handful.
Ours are fried in small batches in pure coconut oil, sliced thin the traditional way, and packed fresh in Calicut. No palm oil, no reused oil, no flavour powders - banana, coconut oil, salt.

Yes - pure coconut oil, small batches. Coconut oil is what gives Kerala banana chips their signature aroma; chips fried in palm oil or sunflower oil taste flat by comparison.Which banana is used?
Raw Nendran - the tall Kerala plantain. It fries crisp without turning greasy and carries a faint natural sweetness. Generic bananas do not make proper Kerala chips.How long do they stay crisp?
