Erachi Ada - irachi ada, if you spell it the way Kozhikode says it - is the beef-filled sister of the kozhi ada. The same thin wheat-flour pastry, crimped by hand, this time around shredded beef cooked down with fennel, ginger, garlic, green chilli, black pepper, coriander, turmeric, garam masala and curry leaves, then fried until the shell is crisp and blistered and the crimped edge holds its shape.

It arrives ready to eat. Every pack - 200, 300 or 500 g - keeps for three months in a cool, dry cupboard - no freezer, no cold chain, nothing to reheat. Open the pack, pour the chaya, and that is the whole preparation.

The beef ada, and why Malabar makes it

In the Mappila kitchens of north Kerala, erachi means beef unless someone says otherwise, and the erachi ada sits beside the kozhi ada in the same bakery glass case. The beef is cooked longer than the chicken, so the masala is darker and the filling denser and more peppery. If you grew up on the beef one, the chicken one is the substitute, not the other way round.

This is the fried, travelling version - wheat pastry, deep-fried, shelf-stable - the same choice we made for the Kozhi Ada and for the same reason: it is the one Calicut buys over the counter, and the only one that survives a courier journey.

Everything is made by hand in our own kitchen in Calicut, under FSSAI licence 21324247000581. The filling is cooked down until the masala coats the meat rather than sitting in gravy - that is the step that keeps the pastry crisp in the pack instead of going soft against a wet filling.
