Soya Ada is the vegetarian ada. The same thin wheat-flour pastry as our Kozhi Ada, crimped by hand, around spiced soya cooked down with the same fennel, ginger, garlic, green chilli, black pepper, coriander, turmeric, garam masala and curry leaves as the meat fillings, then fried until the shell is crisp and blistered. The pack carries the green vegetarian mark.
It arrives ready to eat. Every pack - 200, 300 or 500 g - keeps for three months in a cool, dry cupboard - no freezer, no cold chain, nothing to reheat. Open the pack, pour the chaya, and that is the whole preparation.
Why a soya ada
The kozhi ada and the erachi ada are what the bakeries of Kozhikode sell. The soya ada answers the question every mixed household asks when a parcel arrives from Calicut: which one can the vegetarians have? The masala is the Mappila one, the soya is cooked the way the meat is cooked, and the pastry is identical - so the vegetarian at the table gets the same snack, not a lesser one.
It is the same fried, travelling version as the other two - wheat pastry, deep-fried, shelf-stable - so it ships anywhere in India by ordinary courier and goes into a suitcase without a cold bag.

Everything is made by hand in our own kitchen in Calicut, under FSSAI licence 21324247000581, in the same kitchen as our chicken and beef adas. The filling is cooked down until the masala coats the soya rather than sitting in gravy - that is the step that keeps the pastry crisp in the pack.

Refined wheat flour (maida), soya, edible vegetable oil, onion, water, spices and condiments (ginger, garlic, green chilli, red chilli, black pepper, coriander, turmeric, fennel and garam masala), curry leaves and salt. Contains wheat (gluten) and soy. No added sugar.
