Mutta Surka

Also known as: Pinjanathappam

A steamed egg-white cake flavoured with sugar and cardamom, traditionally served with mutta maala (spun egg-yolk threads).

Mutta Surka is a steamed cake made from egg whites whisked with sugar and cardamom. It is almost always served paired with mutta maala — fine threads of egg yolk spun through hot sugar syrup — so the two together use the whole egg.

The pairing is a signature of Mappila wedding feasts and Eid spreads in north Kerala. In some areas Mutta Surka is also called pinjanathappam.
