Sukhiyan
Also known as: Suhiyan, Sugiyan
A deep-fried Kerala snack of green-gram and jaggery filling coated in flour batter — a Ramadan iftar staple.
Sukhiyan is made by cooking green gram (cherupayar) with jaggery, grated coconut and cardamom into a sweet filling, shaping it into balls, coating them in a flour batter, and deep-frying until golden.
Crisp outside and soft, sweet and earthy inside, it is one of the most common iftar-table snacks during Ramadan across Kerala.
